Chicken and Stuffing Bake

I call this chicken and stuffing bake a struggle meal because it only costs seventy cents per serving to make! All you need is a box of stuffing mix, your choice of dark or white meat from a rotisserie chicken, and any veggies you want to add. I added onions, carrots, and celery to mine, but feel free to get creative!

Equipment

The only equipment you need for this is a skillet and an oven-safe dish! I’m using Corning Ware that my grandma passed down to me. Just seeing the Blue Cornflower pattern makes me crave her cornbread dressing, which is why I came up with this recipe!

Ingredients

Instructions

  1. Preheat oven to the temperature specified in your stuffing instructions.

  2. If you're using fresh veggies, sauté them in the pan until softened.

  3. Then, prepare stuffing mix in pan, according to instructions on the box.

  4. Add in shredded or cubed rotisserie chicken and mix well.

  5. Press mixture into oven-safe dish.

  6. Bake, according to the instructions on the stuffing box.

  7. Let cool slightly and enjoy!
